Ageing in new barrels for 1 - 3 years.
1200 barrels used in our superb, vaulted cellars.
Medals won several times in various competitions.

Appellation : CAHORS AOC
Name : Château Saint-Didier Parnac.
Bottle type : 75 cl - Bordeaux traditional.
Cork : Natural. 49mm.
Grape varieties : 75% Auxerrois, 20% Merlot, 5% Tannat.
Soil : Shingle, quartz, clay/limestone mixture.
Surface area (for this vintage): 70Ha.
Production : 50 Hl/Ha.
Vinification process : Traditional. 15 to 20 days in vats.
Temperature controlled and programmed pumping up of the grape juice onto the top layer of skins and pips every hour.
Maturing : In new barrels, from different types of oak.
Keeping : For 2 to 10 years maximum in a wine cellar.
Can be drunk straight away with game, red meats and cheese.
Organoleptic information :
Colour : A pretty shade, from purply red to dark garnet.

Nose : Fresh and typical of this vintage, complex, macerated fruit, prunes and flavoursome scents of earth and undergrowth.
Taste : Savoury, gourmand, comforting tannins, full and fleshy.
Structure : Elegant, marrying finesse and breeding.
Temperature for drinking : 16° to 17°.

The jewel of the vineyard. Made from the oldest and best situated vines on the estate (20 to 70 years) which produce this wine suitable for lengthy keeping. It's ageing in new oak barrels will make you appreciate it's lengh in the mouth and it's marvellous nose of red fruits.

Organoleptic information :
Colour : Very beautiful and dense dark ruby shade, good depth.

Nose : Pleasant, rich fruity notes. Powerful.
Taste : Rich, with a good bite which unites a pulpous body, delicate and rounded. Intense tannins.
Structure : Elegant, marrying finesse and breeding.


Temperature for drinking : 16° to 17°.
